Salivary gland in the mouth secretes saliva which contains an enzyme ptyalin in an alkaline medium sodium hydrogen trioxocarbonate (iv which makes the digestion of cook starch to maltose faster(Is perform optimally). As the maltose gets into the stomach, the action of ptyaiin stopped by hydrochloric acid secreted by the gastric gland lining the stomach. The hydrochloric acid promotes the digestive action of proteinous enzyme called pepsin which is secreted by gastric gland.
